Roast Courgette & Rocket Gnocchi With Roast Feta

Serves: 2 

  1. Preheat the oven to 220°C. Boil a kettle of water.
  2. Coarsely grate 2 courgettes into a large roasting tray. Peel 2 cloves of garlic, flatten them, and throw them in.
  3. Drizzle over 3tbsp oil, season with salt, pepper and toss everything together. Spread the courgette out into 1 even layer.
  4. Roast in the oven for 10-12min, until golden in places and completely soft.
  5. Crumble 75g of feta onto a small tray. Toss with 1tbsp oil and 1tsp oregano. Roast in the oven alongside the courgette for 8-10min until golden.
  6. Tip 500g gnocchi into a large mixing bowl and cover with boiling water. Allow to stand for 3-4min, until soft.
  7. Once the courgette is ready, scrape it into a large measuring jug with 30g basil and 60g rocket. Add 4tbsp of the gnocchi’s cooking water, then blitz until smooth with a hand blender. Season to taste with salt.
  8. Drain the gnocchi through a colander, return it to the bowl and fold through the green sauce. Divide the gnocchi between plates or bowls, scatter over the roast feta and get stuck in!
