Take Your Pumpkin Soup To The Next Level!

Whether you have pumpkin going spare after carving your lantern, or you just like to use this versatile vegetable in your autumn cooking, there’s one dish that reigns supreme – pumpkin soup. And thanks to HelloFresh you can elevate this winter warmer with a few easy additions!

Cooking doesn’t get much easier than pumpkin soup. It’s one of those great winter warmers that takes less than 30 minutes to prepare and only requires a handful of ingredients.

“All you need to do is heat a pan with oil and add in your chosen vegetables, I always recommend onions and garlic! Cook on a medium heat until golden brown and then add your pumpkin. If you want to intensify the flavour of your pumpkin, briefly roasting it before adding to the pan will help deepen the flavour and improve the texture by reducing the excess moisture. Incorporate the remaining ingredients and bring to a boil. Blitz in a blender and serve immediately with your favourite crusty bread.”

Don’t be shy with your vegetables

To give the texture a bit more thickness, add butternut squash. It’s important to slice it small so it will soften at the same rate as your pumpkin. Carrots, leeks and parsnips are also great additions, really helping towards your five-a-day!

Spice it up

Pumpkin is well known for mixing nicely with warm winter spices such as cinnamon, nutmeg, ginger, cumin, and chilli. Don’t be afraid to mix and match and add slowly until you reach your desired taste.

Make it meaty

A handful of pan fried diced chorizo or bacon makes the perfect, full-flavoured garnish. Finish off with a few shredded herbs to add colour and compliment the salty, rich taste of the meat.

Go nuts

In a dry pan, toast a combination of nuts and seeds until the edges are beginning to caramelise. Then, sprinkle the mixture on top of your soup. The perfect crispy texture can be achieved using hazelnuts, almonds, walnuts, pecans, sunflower seeds, pumpkin seeds, or linseeds.
