Warm Couscous Salad With Halloumi, Lemon, Olives & Herb Oil

A gorgeous summery bowl of goodness from Crespo, ready in 20 minutes. Full of Mediterranean flavours, it works out at £2.95 per serving.*

Serves: 2

  1. Mix together the tomatoes, spring onions, pine nuts, olives and lemon zest in a large bowl.
  2. Place the couscous in a medium bowl and add the tomato purée and hot stock, cover with cling film and leave for 5min.
  3. Meanwhile, heat 1tbsp oil in a frying pan and fry the halloumi cubes for 4-5min until golden all over.
  4. Fluff up the couscous with a fork and add to the cherry tomato mixture with the halloumi. Transfer to a serving plate.
  5. Place the basil and remaining oil in a jug and blitz with a hand blender until smooth then drizzle over the couscous to serve.

Cook’s tip: Try using mozzarella (without frying) instead of the halloumi and serving cold.
