Campfire Beans
With a combination of three beans, four delicious spices (plus a good glug of Dr Trouble Sauce), four of your five-a-day and a surprise shot of coffee, this is a vegan supper bowl to warm and invigorate! Quick to prepare, it takes an hour or so to simmer down into a rich, flavour-filled stew.

Serves 6
- Heat the olive oil in a heavy-based pan and gently fry the onions, celery and carrots for 10 minutes, until softened.
- Add all of the ingredients to the pan, give it a good stir and if it needs it, add enough water to just cover the beans. Cover with a lid and simmer for 1½ hours, or until the beans are tender, topping up with more water if needed, or removing the lid for the last 30min of cooking if there is too much liquid.
- Serve alone, or with vegan sausages or baked potatoes.
