Boursin Bubble & Squeak
Perfect for a lockdown January lunch! Use up your leftovers and add a touch of luxury with creamy, herby Boursin cheese. Quick, easy, tasty – and healthy too.
- Mix cabbage, Brussels, mashed potato and Boursin in a large bowl. Season with salt and pepper.
- Shape into 8 patties and lightly toss in flour, shaking off excess.
- Heat oil in a frying pan and fry patties on a medium high heat (approx 3 minutes either side) until browned on both sides.
- Serve patties with a crumble of Boursin and a sprinkling of fresh parsley. Enjoy!
Cook’s Tips:
- The patties are soft and will be delicate. Use a wide spatula to help flip them over, without breaking them.
- You can use any leftover veg you have – chopped carrots, broccoli and peas all make great additions.
- The measurements don’t have to be exact – add more or less depending on what you’ve got to use up.
