Dark ‘n Stormy® Pork Skewers
To celebrate Rum Day on August 16, we’ve a delicious recipe for sticky pork skewers with a touch of rum in the marinade for extra flavour!
Makes: 4-5 skewers
Marinate for 3hr or overnight
Cooking time: 1hr 20mins
- First make the Dark ‘n Stormy marinade/sauce. Put the ginger ale into a pan and bring to the boil so it reduces by around half.
- Add the brown sugar, rum, salt, celery salt, garlic salt, onion powder, tomato sauce and Worcestershire sauce. Simmer on low heat for 30min to an hour.
- Once cooled, add the cubed pork loin and leave overnight or for at least 3 hours.
- Make up the skewers with a lime quarter on the end, followed by pork, pineapple, pork.
- Cook in the oven for around 15-20min or on the BBQ making sure to baste the skewers with a little extra sauce.
- The remaining sauce can be used for dips and will keep for a week in the fridge.
