Mexican-style Crustless Quiche

With flavours of creamy cheese, chorizo, chipotle and lime, as well as juicy red pepper and tomato, you’d never guess this crustless quiche is a Weight Watchers recipe – but it will only set you back 2 SmartPoints per serving.
Serve with a side salad of mixed leaves, sliced tomato and cucumber for no extra SmartPoints!

Serves 4
- Preheat the oven to 200C, 180C Fan, Gas 6. Lightly whisk the eggs in a large bowl. Beat in the quark until the mixture is smooth.
- Add all the other ingredients except the spinach and cooking spray (reserving some of the feta). Season to taste, stir to combine, then fold in the spinach.
- Mist a 22cm tart tin with cooking spray and pour in the quiche mixture. Top with the reserved feta and bake for 25-30min until golden.
- Let cool in the tin, then cut the crustless quiche into wedges and serve.
