Easy Crab & Prawn Laksa

Here’s a stunningly quick and easy way to make a stunningly tasty dish! You might find laksa in Southern Thailand, Malaysia or Singapore. Five of the ingredients for this version come in cans, and everything – including the raw prawns – is boiled up together into a delicious broth, served with rice noodles.

Serves: 4
- In a saucepan, warm the sesame oil and gently fry the garlic, spring onion and chilli.
- Once these are soft, add in the king prawns, crab meat, coconut milk, stock, tomatoes and the vegetables and bring to the boil. Leave to simmer for 5min.
- Follow the packet instructions and boil the noodles for the time specified, Drain once cooked.
- Spoon out the broth. To each bowl add a squeeze of lime and a sprinkle of fresh coriander.
